Job description

Position Overview

The Sous Chef is responsible for overseeing and coordinating the activities of cooking staff to ensure high-quality food preparation and presentation. This role involves managing food portions, decorations, and garnishes, ensuring accurate preparation quantities, and communicating menu specials and availability to service teams. The Sous Chef also supports kitchen staff in their tasks, maintains kitchen stock levels, and ensures compliance with food safety standards.

Primary Duties

  • Supervise kitchen cooks and workers to maintain efficient operation.
  • Design aesthetically pleasing food presentations and decorative displays.
  • Manage food portioning and garnish arrangements to meet service standards.
  • Monitor quantity and quality of food prepared, alerting management if specifications aren’t met.
  • Communicate menu updates, specials, and item availability to Food & Beverage service staff.
  • Assist with special meal preparation or substitute dishes as needed.
  • Support kitchen staff by providing necessary tools and supplies.
  • Oversee stock inventory for kitchen supplies and food items.
  • Maintain accurate kitchen logs concerning food safety and product usage.
  • Participate in hiring, training, scheduling, evaluating, disciplining, and motivating kitchen employees.
  • Enforce company, safety, and security policies; report hazards, maintenance needs, and incidents appropriately.
  • Ensure professional appearance and confidentiality, protecting company assets.
  • Respond promptly and professionally to guests’ service requirements.
  • Foster positive working relationships and teamwork within the kitchen staff.
  • Uphold quality standards and compliance across all kitchen operations.
  • Perform physical tasks such as standing, walking, bending, lifting objects up to 25 pounds, and other duties as assigned.

Qualifications

  • Technical, Trade, or Vocational School Degree preferred.
  • Four to six years of relevant culinary experience.
  • At least two years of supervisory experience in a kitchen environment.
  • No specific licenses or certifications required.

  • Salary: £12.71 per hour plus service charge.
