Job description

Job Overview

As a Chef de Partie specializing as a Butcher, you will prepare specialized dishes and ingredient substitutes, carefully controlling cooking processes such as oven, broiler, grill, and roaster temperatures. Responsibilities include thawing frozen items appropriately, ensuring proper portioning and presentation of dishes, maintaining accurate food logs, and monitoring the quality and volume of food prepared.

Key Duties

  • Prepare and cook food according to established recipes, quality measures, and presentation standards.
  • Prepare cold dishes and manage food items to optimize usage including reporting excess ingredients for daily specials.
  • Communicate with Food & Beverage service teams about menu specials, out-of-stock items, and guest needs.
  • Assist management in staff related tasks such as hiring, training, scheduling, performance evaluation, counseling, discipline, motivation, and coaching.
  • Promote and follow safety and security policies, report unsafe conditions or incidents, and complete relevant training.
  • Maintain a clean and professional appearance, uphold confidentiality, and safeguard company property.
  • Develop positive relationships with team members to achieve collective objectives and respond constructively to colleague concerns.
  • Comply with quality standards and adapt physically to the requirements of the role—including extended standing, reaching, bending, lifting items up to 25 pounds without help, and other related duties requested by supervisors.

Qualifications

  • Completion of Technical, Trade, or Vocational School education.
  • A minimum of three years’ experience in a related culinary role.
  • No supervisory experience required.
  • Licenses or certifications are not mandatory.
