Role Overview
The Chef de Partie will independently manage a designated kitchen section, ensuring superior quality and consistency in food preparation. This role involves supporting the Executive Chef in daily operations, including preparation and service, as well as supervising kitchen activities when the Executive Chef is unavailable.
Primary Responsibilities
- Assist the Executive Chef with daily kitchen tasks and meal services.
- Lead and oversee kitchen operations during the Executive Chef's absence.
- Take full responsibility for one kitchen section, maintaining smooth and efficient service delivery.
- Ensure that food presentation and portion sizes meet established standards throughout all dining venues.
- Manage inventory by monitoring stock levels, minimizing waste, and enforcing proper stock rotation.
- Maintain all kitchen equipment and workspaces in compliance with workplace health, safety, and hygiene regulations.
Candidate Profile and Qualifications
- Demonstrated success in a similar position within a fast-paced, high-volume kitchen environment.
- Possession of relevant trade qualifications such as Certificate III in Commercial Cookery or an equivalent certification.
- Advanced culinary skills using diverse cooking techniques and cuisines.
- Experience with dinner service and Conference & Events (C&E) kitchen operations.
- Minimum of 2 to 3 years’ experience working in event settings and leading night-time kitchen teams.
- Willingness and availability to work evening shifts on a 7-day rotating roster.
- Proven leadership abilities with experience mentoring and managing junior kitchen staff during service periods.
- Strong communication, organisational, and time management skills.
- Thorough knowledge of food safety standards, hygiene practices, and HACCP compliance.
