About the Long Bar

The historic Long Bar, renowned as the birthplace of the Singapore Sling cocktail in 1915, features decor inspired by 1920s Malayan life and a tropical plantation ambiance. Its signature cocktail was crafted to offer a socially-acceptable alcoholic drink resembling fruit juice, making it a longstanding icon of the bar.

Role Summary

The Resident Bartender is responsible for preparing and serving drinks adhering to Raffles' hospitality and quality standards. They engage guests by providing exceptional service and ensuring the bar’s operational excellence.

Key Duties and Responsibilities

  • Assist the Resident Mixologist in delivering exemplary hospitality and drink preparation.
  • Maintain operational par stock levels for operational supplies and beverages.
  • Follow established Standard Operating Procedures for bar operations.
  • Ensure consistent quality and adherence to bar recipes for all drinks served.
  • Regularly coordinate equipment maintenance checks with Engineering and Housekeeping teams.
  • Maintain cleanliness and hygiene of bar and surrounding areas according to Raffles and HACCP standards.
  • Uphold appearance standards of the bar and respond promptly to cleanliness issues.
  • Participate in Raffles and Food & Beverage training sessions for continuous development.
  • Become proficient with company software and systems such as Micros, Avero, and FutureLog.
  • Be present at the bar during peak operational periods to ensure smooth service.
  • Work towards meeting or exceeding sales targets and outlet goals.
  • Create personalized guest experiences following MOQ, Forbes, and LQA standards.
  • Build strong rapport with guests, fostering loyalty and repeat business.
  • Protect guest and colleague confidentiality and practice discretion at all times.
  • Adopt the Heartist® approach to make guests and colleagues feel welcomed, valued, and connected.
  • Align service standards and individual performance with Accor's core values: Guest Passion, Trust, Sustainable Performance, Spirit of Conquest, Innovation, and Respect.
  • Contribute to the hotel’s Corporate Social Responsibility and sustainability initiatives.
  • Undertake other duties as assigned.

Marketing and Financial Responsibilities

  • Confidently handle guest inquiries and feedback regarding the hotel and bar offerings.
  • Propose ideas for additional revenue streams, including promotions.
  • Implement cost, expense, and labor control measures effectively.

Training and Team Development

  • Attend mandatory training sessions related to Raffles Hotel and Food & Beverage.
  • Engage in on-the-job training to acquire new skills and knowledge.
  • Support departmental orientation for new colleagues.
  • Comply with fire safety, emergency procedures, and hygiene regulations as stipulated by NEA and Raffles policies.

Candidate Profile and Requirements

  • Minimum of 1 year’s relevant bartending experience at a comparable establishment.
  • Good knowledge of classic and international cocktails, spirits, and general hospitality practices.
  • Proficiency in Microsoft Office and basic Point of Sales (POS) systems.
  • Certification with a valid National Environment Agency (Singapore) Basic Food Hygiene Handler license.
  • Strong passion for beverage mixing and in-depth knowledge of alcoholic drinks.
  • Resourceful team player capable of building and maintaining collaborative relationships within and outside the hotel.
  • Excellent interpersonal communication skills across all organizational levels.
  • Detail-oriented, service-minded, and innovative within the Food & Beverage sector.
  • Ability to work autonomously with high initiative in a dynamic environment.
  • Adaptability, flexibility, and positive attitude towards change.
  • Customer-focused with a sense of urgency and prioritization skills.
  • Capable of performing well under pressure and anticipating guest needs.
