Role Overview
We are seeking a Pastry Chef to lead and oversee all pastry and bakery operations at InterContinental Doha The City. This role demands maintaining exceptional quality, creativity, and food safety while ensuring guest satisfaction. The Pastry Chef will manage production of pastries, desserts, breads, cakes, chocolates, and specialty items across all hotel outlets, banquets, and events. A key responsibility is inspiring and guiding the pastry team, ensuring uniformity in presentation and flavor, keeping costs efficient, and supporting the hotel’s culinary goals while delivering True Hospitality for Good.
Key Responsibilities
- Lead daily operations within the pastry and bakery kitchen.
- Create and innovate dessert, pastry, bakery, and confectionery menus.
- Ensure that all pastries align with IHG brand standards and hotel quality requirements.
- Produce a wide range of high-quality breads, viennoiseries, cakes, chocolates, desserts, and specialty items.
- Design seasonal and promotional dessert offerings.
- Collaborate with Executive/Head Chef on menu development and special culinary events.
- Maintain consistency in flavor, presentation, and portion control throughout all service outlets.
- Support banquet functions with creative dessert presentations for conferences, weddings, and special events.
- Apply new techniques and trends to enhance guest dining experiences.
- Ensure adherence to HACCP, food safety protocols, and local regulatory standards.
- Uphold highest cleanliness and sanitation standards in the pastry kitchen.
- Monitor food storage, labeling, temperature control, and rotate stock appropriately.
- Conduct quality checks on ingredients and finished products regularly.
- Ensure proper maintenance and safe usage of kitchen equipment.
- Supervise, train, and motivate the pastry team, fostering professional growth.
- Prepare work schedules and assign daily tasks effectively.
- Provide on-the-job training and support for team development.
- Participate in performance appraisals and succession planning.
- Promote a collaborative and positive team environment.
- Maintain standardized recipes and detailed production records.
- Prepare reports as needed for Executive/Head Chef.
- Ensure compliance with hotel policies, brand standards, and local regulations.
- Engage in departmental meetings and continuous improvement initiatives.
Candidate Requirements
- Diploma or degree in Culinary Arts, Pastry Arts, or a related discipline.
- Professional certification in pastry arts is advantageous.
- HACCP or Food Safety certification preferred.
- A minimum of five years’ pastry experience within hotels or international hospitality brands.
- At least two years in a supervisory or leadership capacity within pastry operations.
- Experience with banquet production and managing high-volume hotel pastry operations is favorable.
- Previous employment with IHG or an international hotel brand is a plus.
- Thorough knowledge of pastry, bakery, chocolate, and dessert preparation processes.
- Creative flair and artistic skills for presentation.
- Proven leadership and team development capabilities.
- Competence in food costing and inventory control.
- Understanding of HACCP and food safety standards.
- Excellent organizational and planning skills.
- Ability to operate effectively under pressure and manage production deadlines.
- Strong communication and interpersonal skills.
- Problem-solving aptitude and confident decision-making abilities.
- Computer proficiency in Microsoft Office and kitchen management software.
