Role Overview
We seek a Junior Sous Chef specialized in Pastry to support and manage day-to-day pastry kitchen operations. This role focuses on producing high-quality pastries, breads, desserts, and baked goods adhering strictly to established recipes and presentation standards expected from a luxury hospitality environment. The role involves close collaboration with the Pastry Sous Chef and includes leadership responsibilities such as supervising staff, ensuring smooth workflow, and mentoring junior chefs.
Key Responsibilities
- Manage preparation and production processes for pastries, desserts, breads, and baked items.
- Maintain consistent quality, taste, presentation, portion control, and recipe compliance.
- Assist in overseeing and supporting the pastry team throughout daily service and operations.
- Provide training, guidance, and mentorship to junior pastry personnel.
- Organize daily mise en place to promote efficient kitchen workflow.
- Contribute to innovation by helping develop new pastry and dessert menu items and special event offerings.
- Monitor inventory levels, supervise stock rotation, and oversee ordering procedures.
- Implement waste control measures and support cost management initiatives.
- Ensure strict compliance with HACCP principles, food safety, hygiene, and regulatory requirements.
- Maintain a high standard of cleanliness, orderliness, and proper use of kitchen equipment.
Required Qualifications & Experience
- Holding a diploma or certification in Pastry Arts, Baking, Culinary Arts, or a related discipline.
- 3 to 5 years of pastry and bakery experience in luxury hotel or resort environments.
- Previous leadership experience in supervising or leading pastry kitchen teams.
- Strong expertise in pastry, baking, chocolate work, desserts, and production techniques.
- Proficient knowledge of HACCP standards, food safety protocols, hygiene, and health regulations.
- Demonstrated leadership capabilities with a focus on coaching and developing culinary team members.
- Attention to detail, creative approach, and dedication to premium presentation quality.
- Excellent organization and time management skills under pressure.
- Ability to manage multiple priorities and sustain quality in busy service conditions.
- Willingness to work varied shifts, including weekends, public holidays, and during special events.
- Strong interpersonal, communication, and teamwork skills.
- Experience with internationally recognized luxury hospitality brands is advantageous.
