Wynn Al Marjan Island is set to become the UAE's inaugural integrated resort, scheduled for launch in 2027. Located 50 miles from Dubai International Airport in Ras Al Khaimah, the resort will feature 1,530 rooms and suites, 22 dining and drinking venues including restaurants, lounges, and bars, alongside amenities such as a theater, beach club, multiple pools, water attractions, a luxury spa, salon, shopping promenade, and a special events center.

Role Overview

The resort is looking to hire a Food & Beverage Licensing Manager to join the beverage division, responsible for managing all licensing aspects relevant to food and beverage operations covering the entire property.

Key Duties

• Develop and maintain a comprehensive licensing roadmap for all food and beverage operations, including restaurants, bars, lounges, in-venue service points, kitchens, storage, outdoor areas—covering initial approvals, renewals, amendments, and closures.
• Manage a centralized license register capturing all essential documents such as trade and operational licenses, alcohol permits, health and hygiene certifications, entertainment and music permits, signage approvals, outdoor seating usage, terrace permissions, delivery authorizations, and vehicle-related licenses.
• Serve as the main liaison with relevant local and federal government bodies, including Economic Development, Municipal/Public Health, Tourism Authority, Civil Defense, Police/Events departments and other regulatory agencies for acquiring, renewing, or amending approvals.
• Oversee event-related licensing and notifications for activities such as celebrations, tastings, brand activations, outdoor gatherings, and temporary extensions, coordinating logistics like site plans, crowd management, entertainment permissions, and security clearance.
• Supervise authorized PROs, translation and legalization services, as well as specialized consultants; handling contract negotiations, service level agreements, and fees.
• Maintain organized physical and digital license records, submission logs, approval documentation, and approved layout and certificate libraries.
• Collaborate with outlet management and appoint Venue Licensing Champions across the various outlets to ensure compliance and smooth operations.

Candidate Profile

• Possess 4 to 6 years of experience managing licensing or compliance within hospitality, food & beverage sectors, large venues, or integrated resorts in the UAE with proven ability handling multi-venue portfolios and event permits.
• Well-versed in UAE and Emirate-level licensing requirements, public health and hygiene mandates, tourism and entertainment permits, Civil Defense regulations, as well as HACCP and food safety standards.
• Experience with alcohol licensing and responsible service guidelines is a strong plus; proficiency in Arabic reading or business communication is advantageous.
• Familiar with e-government platforms, document legalization, and attestation systems.
• Educational background includes a diploma or degree in Hospitality Management, Business, Law, or Public Administration; certifications in compliance or food safety such as HACCP are beneficial.
• Fluent in English with additional language skills like Arabic considered an asset.
• Proficient in Microsoft Office, document management systems, and data tracking tools such as Excel, SharePoint, or Power BI.
