Job description

Role Overview

Oversee daily operations for all Food and Beverage outlets including restaurants, bars, and banquet facilities, ensuring service excellence and high guest satisfaction.

Key Duties and Responsibilities

  • Manage and supervise all assigned F&B outlets to uphold superior food quality, cleanliness, presentation, and guest experience.
  • Track daily sales, revenue, cover counts, average check values, and overall outlet performance metrics.
  • Control and optimize food, beverage, labor, inventory, wastage, and operational costs to maximize profitability.
  • Ensure strict adherence to food safety protocols, HACCP guidelines, hygiene, and occupational health and safety standards.
  • Lead and mentor the F&B team; conduct regular briefings and training sessions to develop staff performance.
  • Prepare duty rosters and allocate workforce effectively based on business volume and operational requirements.
  • Manage guest feedback and complaints professionally, ensuring timely and appropriate resolution.
  • Collaborate closely with other departments such as Kitchen, Stewarding, Housekeeping, Engineering, Sales, and Front Office to streamline operations.
  • Maintain and control inventory records, monitor stock levels, requisitions, wastage, breakage, and oversee monthly stocktake processes.
  • Support and coordinate F&B promotional activities, events, banquets, and revenue enhancement programs.
  • Comply with hotel policies, SOPs, brand standards, and oversee proper cash handling procedures.
  • Analyze departmental reports regularly and implement corrective measures as necessary.
  • Foster a safe, professional, and positive working atmosphere for all team members.

Qualifications and Experience

  • Bachelor's Degree or Diploma in Hotel Management, Hospitality Management, or a related discipline.
  • Minimum of 3 to 5 years experience in Food and Beverage management within hotels or upscale hospitality settings.
  • Comprehensive understanding of F&B operations including cost control, budgeting, inventory management, and revenue strategy.
  • Well-versed in food safety standards, HACCP certification, hygiene practices, and health & safety regulations.
  • Proficient with POS systems, TINIS, property management software, and Microsoft Office applications.

Skills and Competencies

  • Strong leadership and team management capabilities with experience leading multicultural teams.
  • Outstanding communication, interpersonal, organizational, and problem-solving skills.
  • Excellent time management abilities and attention to detail.
  • High standard of guest service and adept complaint-handling skills.
  • Professional demeanor and positive attitude essential.
  • Flexible to work varied shifts including weekends, public holidays, and peak business periods.
  • Good command of English; proficiency in additional languages considered a plus.
