Job description
Job Overview
This position holds full responsibility for the daily functioning and success of kitchen operations. The Executive Chef II not only leads culinary staff but also actively demonstrates cooking expertise. The role focuses on enhancing satisfaction for both guests and employees while maximizing financial results across all operational areas. Oversight spans all kitchen sectors to maintain consistent high-quality food production and includes the stewardship of sanitation and food safety standards.
Key Duties
- Directs all kitchen management activities and oversees daily operational execution.
- Manages and supports kitchen staff, including cooks and food preparation workers, ensuring performance standards are met; fills staffing gaps when necessary.
- Fosters a collaborative, respectful work environment, encouraging open communication and employee engagement.
- Develops and enforces guidelines for purchasing, receiving, and storage to control quality and budgets.
- Monitors culinary quality, presentation, and food safety compliance across all food preparation and service areas including banquets, restaurants, room service, and staff cafeterias.
- Leads menu development and introduces new cooking methods and equipment.
- Provides outstanding customer service by mentoring employees to understand and exceed guest expectations and by personally managing guest interactions and resolving complaints.
- Implements safety and sanitation protocols rigorously; ensures that all kitchen staff maintain necessary certifications.
- Participates in budgeting and controls department expenses such as food costs, supplies, uniforms, and equipment.
- Conducts performance appraisals, employee training, mentoring, and manages disciplinary processes in alignment with company policies.
- Communicates effectively with executive teams and other departments; analyzes operational data to inform decision-making.
Candidate Profile
- Education: High school diploma or GED with minimum 6 years relevant experience, OR a 2-year accredited degree in Culinary Arts, Hotel and Restaurant Management or related field with 4 years of relevant experience.
