Job description
Position Overview
The Confectioner is responsible for crafting superior quality pastries, desserts, petit fours, and baked goods adhering to company policies and public health standards, aiming to achieve exceptional guest satisfaction.
Reporting Structure
- Reports directly to the Executive Chef, Executive Sous Chef, and Pastry Chef.
- Leads and supervises Assistant Pastry Chefs.
Key Responsibilities
- Produce and present a range of high-quality pastries and desserts for all meal services.
- Work collaboratively with the pastry team to maintain consistent product quality and presentation.
- Oversee daily pastry operations and step in for the Pastry Chef when necessary.
- Arrange buffet displays, service stations, and dessert presentations for special events following company standards.
- Plan and schedule production, manage supply requisitions, and coordinate special orders in response to guest needs.
- Maintain food quality, proper storage, control inventory, and minimize waste by adhering to cost-conscious production techniques.
- Ensure hygiene, sanitation, and compliance with all food safety and public health regulations at all times.
- Monitor the condition of kitchen equipment, perform minor maintenance, and report any technical issues promptly.
- Support the training, onboarding, and professional growth of pastry team members while promoting teamwork.
- Provide excellent guest service, accommodate dietary needs, and comply with company policies, SOPs, grooming, and conduct standards.
Qualifications and Experience
- Hold a valid STCW95 certification.
- Possess a minimum of four years' experience in a similar role within an international 5-star establishment.
- Demonstrate solid knowledge of international cuisine practices.
- Understand public health policies and procedures related to food preparation.
- Have the ability to interpret and perform culinary fundamentals effectively.
- Be physically and medically fit for the role.
Language Proficiency
Fluency in spoken and written English is required to communicate effectively with guests and crew in a multicultural environment and to follow or give clear instructions.
