Key Responsibilities
- Oversee daily kitchen operations across two hotels, ensuring smooth workflows.
- Plan, assign, and monitor staff work and set performance and growth objectives.
- Deliver coaching and feedback to manage team dynamics and enhance performance.
- Maintain comprehensive and accurate dish costing records for food and beverage services.
- Train staff to comply with brand standards, service protocols, and regulatory requirements.
- Ensure team members have necessary tools, training, and equipment to perform their roles.
- Foster collaboration and quality service through coordination with other departments.
- Initiate staffing actions like promotions or disciplinary measures following company policies.
- Gather guest feedback to drive improvements in food quality.
- Address customer queries and issues related to kitchen services.
- Support Food and Beverage leadership in menu planning, event coordination, and presentation details.
- Guarantee all menu offerings meet recipe and presentation standards.
- Create menu designs and concepts for outlets and catering.
- Monitor industry and competitor trends to guide offerings.
- Implement processes for secure storage and inventory management to reduce waste and theft.
- Maintain kitchen equipment and storerooms in optimal condition and cleanliness.
- Comply with government regulations, brand protocols, and hotel policies.
- Contribute to annual budgeting and departmental goal setting.
Requirements
- Demonstrated experience as Executive or Head Chef at a reputable venue.
- Deep expertise in culinary arts, cooking methods, and global cuisines.
- Proven leadership and team management capabilities.
- Strong knowledge of food costing, inventory control, and budgeting procedures.
- Thorough understanding of hygiene and safety standards, including HACCP.
- Innovative approach with enthusiasm for menu and dish creation.
- Relevant culinary qualifications or certifications.
