Job description

Position Overview

The Confectioner is tasked with delivering superior quality, efficient, and customized pastry creations that meet Company Policies and comply strictly with Public Health standards, aiming to maximize guest satisfaction.

Reporting and Team Structure

  • Reports directly to the Executive Chef, Executive Sous Chef, and Pastry Chef.
  • Oversees Assistant Pastry Chefs.

Key Responsibilities

  • Craft and showcase premium pastries, desserts, petit fours, and baked goods across all meal services.
  • Work closely with the pastry team ensuring consistency in production quality and presentation.
  • Manage daily pastry operations and stand in for the Pastry Chef as necessary.
  • Arrange buffet presentations, service points, and dessert displays for special events to meet company standards.
  • Develop production timetables, manage procurement orders, and coordinate special guest requests.
  • Uphold food quality standards, manage proper storage, oversee inventory, and minimize waste through economical production.
  • Maintain strict cleanliness, sanitation, and comply with food safety and public health regulations continuously.
  • Monitor condition of kitchen equipment, conduct routine maintenance, and promptly report any operational issues.
  • Contribute to training and development of pastry staff, fostering a cooperative team environment.
  • Provide outstanding guest services, accommodate dietary needs, and adhere to company policies, SOPs, grooming, and conduct protocols.

Qualifications and Experience

  • Possession of a valid STCW95 certification.
  • At least 4 years of experience in a similar role within an International 5-star hotel or establishment.
  • Strong familiarity with International cuisine.
  • Understanding of Public Health policies and procedures.
  • Competent in reading, interpreting, and applying culinary fundamentals.
  • Must be physically and medically fit for the role.

Language Skills

Must be fluent in both spoken and written English, capable of clear communication with guests and multicultural crews, including following and issuing precise instructions.
