Position Overview

The Pastry Chef plays a critical role in ensuring the preparation of top-quality, efficient, and technically proficient pastries and baked goods. Operating under stringent Public Health regulations and company policies, this position directs the pastry station’s daily operations to optimize cost-effectiveness and deliver complete guest satisfaction.

Key Duties and Responsibilities

  • Oversee and manage pastry and bakery production across multiple meal services including breakfast, lunch, teatime, dinner, special events, and crew mess facilities.
  • Create exquisite showpieces for buffet displays and plated presentations, and coordinate live pastry demonstrations.
  • Accommodate special guest requests, including dietary restrictions, allergies, and ingredient constraints through advanced baking expertise.
  • Support menu development, uphold standard recipe manuals, and adhere to corporate menu cycles while consistently analyzing production for quality enhancement.
  • Forecast food requirements, prepare and verify supply requisitions, and control inventory to reduce waste and damage.

Leadership and Team Oversight

  • Lead training and mentorship initiatives for new and existing pastry staff to enhance their technical skills and guest-oriented service approach.
  • Manage workforce schedules to monitor working hours, prevent excessive overtime, and comply with ILO and MLC guidelines.
  • Maintain strict enforcement of company standards regarding uniform, grooming, and professional behavior.

Health, Safety, and Compliance

  • Ensure preparedness for internal and external Public Health inspections through rigorous sanitation and hygiene practices.
  • Maintain daily temperature logs for refrigeration and freezer units following company protocols.
  • Engage in preventative maintenance, operate kitchen equipment safely, and report any malfunctions without delay.
  • Participate in required safety drills, uphold pollution control policies, and promote the correct use of personal protective equipment.

Guest Relations and Communication

  • Actively monitor guest satisfaction, proactively anticipate needs, and swiftly address any service issues or complaints.
  • Maintain open and consistent communication with the Executive Chef and Executive Sous Chef, keeping them informed of operational updates, challenges, and achievements.

Required Qualifications and Experience

  • Possession of a valid STCW95 certification.
  • A minimum of four years’ experience in a pastry leadership capacity within an international 5-star hospitality environment.
  • Comprehensive knowledge of global cuisine, mastery of pastry and baking techniques, exceptional eye for detail, and awareness of contemporary culinary trends.
  • Proven familiarity with Public Health requirements, sanitation standards, and accurate temperature documentation.
  • Must be physically and medically fit for shipboard assignments and uphold the company's code of conduct continuously.
