Job description
Position Overview
The role involves crafting high-quality, precise, and personalized pastry creations in line with company policies while strictly adhering to public health regulations, aiming for complete guest satisfaction.
Reporting Duties
- Reports directly to the Executive Chef, Executive Sous Chef, and Pastry Chef.
- Supervises Assistant Pastry Chefs.
Key Responsibilities
- Create and serve premium pastries, desserts, petit fours, and various baked goods across all dining services.
- Work cohesively with the pastry team to maintain uniformity in production and presentation.
- Oversee daily pastry activities and step in for the Pastry Chef when necessary.
- Design and arrange buffet displays, service counters, and desserts for special events per company standards.
- Develop production timelines, handle requisitions, and manage special requests based on guest preferences.
- Maintain high standards in food quality, storage practices, inventory management, and minimize waste through cost-efficient methods.
- Ensure strict hygiene, sanitation, and full compliance with food safety and public health guidelines continually.
- Inspect and maintain equipment, including basic repairs and prompt reporting of any issues.
- Facilitate onboarding, training, and growth of pastry team members while encouraging positive team dynamics.
- Provide outstanding guest services, accommodate special dietary needs, and adhere to company policies, SOPs, grooming, and conduct standards.
Qualifications and Experience
- Possession of a valid STCW95 certificate.
- At least 4 years in a comparable role within an international five-star environment.
- Comprehensive understanding of international cuisine.
- Familiarity with and experience in implementing public health policies and procedures.
- Proficiency in interpreting and applying the fundamentals of culinary arts.
- Physical and medical fitness is required.
Language Requirements
- Fluent command of both spoken and written English, capable of effective communication with guests and colleagues in a multicultural setting and able to follow or issue clear instructions.
