Role Overview and Responsibilities

  • Lead and train kitchen staff within assigned sections, ensuring high-quality food preparation.
  • Maintain personal hygiene standards and professional conduct among team members.
  • Prepare food items that meet quality, taste, temperature, and presentation guidelines.
  • Organize and store equipment and perishable items hygienically and systematically.
  • Prevent use of contaminated food products and restrict food handling by staff who are unwell or infected.
  • Ensure compliance with hygiene and sanitation protocols in food handling and kitchen operations.
  • Coordinate with stewarding teams to sustain kitchen cleanliness.
  • Adhere to all safety, health, security, and loss control policies including applicable government regulations.
  • Be knowledgeable of and responsive to hotel fire, life safety, and emergency procedures.
  • Implement and uphold hotel food safety and hygiene standards, including HACCP guidelines.
  • Participate in briefings, meetings, and training sessions as directed by management.
  • Maintain consistently high standards of personal appearance and hygiene.
  • Perform additional reasonable duties as assigned by management.

Qualifications and Experience

  • At least primary school education; further culinary certifications advantageous.
  • Minimum of two years’ relevant experience in a similar kitchen position.
  • Proficient in English reading, writing, and speaking.
  • Strong communication skills and ability to interact well with customers.
  • Capable of working effectively in high-pressure environments.
  • Sound knowledge of food safety standards and HACCP principles.
