Job description
Position Overview
The Baker Lead is responsible for crafting a variety of breads and pastries by preparing doughs, fillings, proofing, baking, and decorating according to production schedules and quality standards. This role involves adhering to food safety and hygiene policies, maintaining kitchen logs, and ensuring appliance and food temperatures comply with safety standards.
Key Duties and Responsibilities
- Prepare bakery products including breads and pastries following recipes and daily production sheets.
- Manage and monitor the baking process to maintain quality, portion control, and presentation.
- Maintain kitchen logbooks to ensure compliance with food safety programs.
- Communicate with the Chef regarding surplus food items to assist in daily special planning.
- Utilize baking and measuring equipment safely and correctly.
- Ensure adherence to personal hygiene and food handling procedures.
- Verify kitchen appliance and food temperatures and report discrepancies to management promptly.
- Assist management in hiring, training, scheduling, evaluating, counseling, motivating, and coaching team members, acting as a role model.
- Comply with all company policies including safety, security, confidentiality, and uniform standards.
- Maintain professional communication and provide excellent teamwork to meet shared objectives.
- Perform physical duties such as moving and lifting items up to 25 pounds, working on uneven surfaces, and maintaining physical stamina for extended periods.
- Fulfill additional reasonable duties as assigned by supervisors.
Preferred Qualifications
- Technical, Trade, or Vocational School Degree.
- A minimum of 2 years of relevant work experience in baking.
- No prior supervisory experience required but leadership qualities expected.
- No specific licenses or certifications mandated.
