Job description
About the Role
The Meat Cutter position involves slicing, portioning, and packaging meats and seafood precisely according to work orders and customer requirements. This role requires adherence to safety protocols, Good Manufacturing Practices (GMP), and quality standards to ensure smooth processing within the production line. It emphasizes teamwork and flexibility to contribute effectively within the department and the broader organization.
Key Responsibilities
- Review daily work schedules and conduct safety inspections of equipment before operations begin. Gather necessary supplies and prepare workstations accordingly. Complete all required documentation and secure equipment at shift's end.
- Verify cutting lists, retrieve stock from coolers, handle cases appropriately, and manage waste disposal responsibly.
- Use hand knives to cut a variety of raw meats and seafood (including beef, pork, lamb, and seafood) applying correct cutting methods. Clean and sanitize tools while complying with USDA rules and standards.
- Operate band saws or slicers for portioning meat/seafood, verify weights, and properly place the cut portions into designated containers.
- Remove scrap materials and arrange for pick-up in designated areas.
- Support packers and sanitation staff whenever needed.
- Maintain cleanliness and orderliness of the packaging area and equipment, ensuring all safety and quality regulations are upheld.
- Perform additional related duties as assigned to support production needs.
Qualifications & Experience
- High School Diploma, GED, or equivalent experience.
- Minimum of 6 months to 1 year experience in meat or seafood cutting or a closely related field.
