Key Responsibilities

• Implement and schedule preventive maintenance programs for all kitchen and laundry equipment in the hotel.
• Ensure adherence to local authority maintenance requirements for kitchen equipment.
• Maintain records and coordinate with the hygiene manager to fulfill HACCP standards.
• Attend to repair and maintenance of laundry and kitchen equipment, covering both electrical and gas appliances.
• Oversee the operation, repair, and upkeep of all cold rooms, refrigeration units, ice machines, and other cooling systems.
• Manage operation and maintenance of ovens, dishwashers, stoves, and other electric and gas kitchen appliances.
• Assist in technical aspects during installation of new or additional kitchen equipment.
• Conduct regular inspections and log observations in kitchen and bar areas.
• Perform daily readings and monitoring of cold rooms and refrigeration equipment to ensure proper functioning.
• Carry out equipment repairs following manufacturer guidelines.
• Complete assigned checklists, inspections, tests, and logs diligently.
• Replace fused kitchen lights and water filters for coffee machines, combi ovens, ice machines, and other water systems regularly.
• Perform general and emergency repair and maintenance tasks on kitchen equipment.
• Ensure all fire safety and engineering systems operate efficiently at all times.
• Maintain comprehensive and accurate records for all plant and equipment.
• Review and resolve or follow up on outstanding maintenance issues from previous shifts related to kitchen equipment and systems.
• Complete daily assigned tasks promptly and to departmental standards.
• Guarantee timely completion of maintenance requests within acceptable time frames.
• Liaise and supervise external kitchen equipment contractors to maintain service quality standards.
• Support fellow engineering team members as needed.
• Maintain all tools and equipment in proper working condition.
• Ensure adequate inventory of spare parts and maintenance materials.
• Comply with safe operating procedures to safeguard staff and guests.

Qualifications and Experience

• At least 5 years experience as a Kitchen Technician within 4 or 5-star hotel environments.
• Proficient knowledge in repair and maintenance of both hot and cold kitchen equipment, including chillers, freezers, dishwashers, glass washers, gas cooking equipment, and various ovens.
• Familiarity with multiple kitchen equipment brands.
• Skilled in ARC and gas welding techniques.
• Awareness and understanding of HACCP protocols.
