Role Overview
The Kitchen Steward plays a crucial role in upholding exceptional cleanliness, sanitation, and hygiene standards across all kitchen-related zones including stewarding and food preparation areas. This position ensures that all kitchen apparatus, utensils, crockery, glassware, cutlery, and work surfaces are thoroughly cleaned, sanitized, correctly stored, and ready for daily culinary operations.
Key Duties and Responsibilities
- Handle washing of dishes, pots, pans, utensils, kitchen tools, plates, glassware, and silverware by utilizing dishwashing machines or manual approaches.
- Clean and disinfect kitchen equipment, preparation counters, sinks, walls, floors, drains, and storage zones to maintain hygiene.
- Continuously organize and sanitize stewarding and kitchen spaces during shifts.
- Operate and oversee dishwashers, pot-washing stations, hand-washing units, and waste disposal apparatus as per defined procedures.
- Scrutinize washed items for hygiene quality; re-clean if necessary and store items properly to prevent damage.
- Return all clean equipment and utensils to assigned storage areas minimizing breakage risks.
- Adhere strictly to food safety, hygiene standards, and hotel sanitation protocols.
- Manage cleaning chemicals responsibly following safety guidelines and manufacturer instructions.
- Follow appropriate waste disposal and segregation procedures.
- Ensure compliance with HACCP and relevant food safety legislation.
- Promptly report sanitation or food safety issues to supervisory staff.
- Assist in receiving, inspecting, storing, and rotating deliveries utilizing FIFO practices.
- Maintain cleanliness and order of operational equipment and kitchen tools.
- Identify and report damaged equipment or safety concerns swiftly.
- Contribute to conduct inventories of supplies and equipment periodically.
- Help reduce loss or damage to kitchen items such as glassware and cutlery.
- Support kitchen workflow by ensuring an uninterrupted supply of clean utensils and equipment.
- Aid kitchen personnel with cleaning and operational tasks as required.
- Complete daily cleaning routines and deep cleaning assignments.
- Comply with directives from Chief Steward or Stewarding Supervisor to ensure seamless operations.
- Assist during events like banquets or peak business periods.
- Follow all hotel policies including fire safety, occupational health, and hygiene standards.
- Wear required uniform, PPE, and maintain grooming standards consistently.
- Immediately report accidents, unsafe conditions, and security issues.
- Participate in emergency response protocols adhering to hotel policies and support emergency teams when needed.
- Maintain punctual attendance and professional conduct.
- Exhibit excellent personal hygiene and a neat appearance.
- Foster positive workplace relationships across departments.
- Attend all required training, meetings, and hotel-mandated programs.
- Demonstrate operational flexibility across the Food & Beverage division when asked.
- Provide courteous and professional service to colleagues and guests, embodying the hotel's service culture and values.
Qualifications and Experience
- Completion of high school or equivalent qualification preferred.
- Prior experience in stewarding, kitchen sanitation, or hospitality is advantageous but not mandatory.
- Experience within hotels or large-scale food service environments is beneficial.
