Job Overview
We are seeking a dedicated Chef de Partie specializing in Sushi to join our team in Doha, Qatar. This full-time position requires expertise in preparing and presenting authentic Japanese sushi and related dishes, maintaining top-quality standards in taste, texture, and presentation. The role demands close collaboration with kitchen staff, adherence to safety and hygiene protocols, inventory management, and contribution to menu innovation and promotions.
Key Responsibilities
- Prepare and present high-standard sushi including mise en place, rolling, and slicing sashimi.
- Ensure consistently excellent taste, texture, and visual appeal of all sushi items following standardized recipes.
- Maintain hygienic workstations and strictly observe food safety and HACCP guidelines.
- Assist in inventory control, ordering supplies, and proper storage of ingredients.
- Train junior kitchen members on sushi preparation techniques and standards.
- Support menu development and participate in special culinary promotions.
- Work effectively under pressure in a fast-paced hotel environment adhering to Marriott’s service standards.
Qualifications and Skills
- Proven experience as a Sushi Chef or Chef de Partie in reputable hotel or fine dining settings with strong skills in Japanese cuisine.
- Comprehensive knowledge of food safety, hygiene practices, and HACCP standards related to seafood and rice handling.
- Excellent knife skills, plating, portion control, and presentation abilities.
- Strong teamwork and communication skills to collaborate with kitchen and service staff effectively.
- Capable of training junior chefs in sushi techniques and kitchen protocols.
- Effective time management and organizational abilities to manage multiple orders and maintain mise en place.
- Flexibility to work diverse shifts including weekends and holidays.
- Culinary education or certification preferred; experience in international luxury hotels is advantageous.
- Basic English proficiency required; additional language skills are a plus.
