Job Overview

We are seeking an experienced Chef de Partie specializing in pastry to join our esteemed hospitality team in Doha, Qatar. The role involves overseeing daily pastry production, ensuring high standards of quality, presentation, and hygiene in a luxury hotel environment.

Qualifications and Experience

  • Minimum 2 years as a Chef de Partie in pastry or 3-4 years in roles such as Demi Chef de Partie or Commis in high-end hotels or restaurants, preferably international luxury brands.
  • Professional certification or diploma in Pastry, Bakery, Culinary Arts, Kitchen Production, or similar fields is advantageous.
  • Solid expertise in creating pastries, desserts, cakes, chocolates, bakery items, plating, and product presentation.
  • Thorough knowledge of food safety, hygiene, HACCP standards, and occupational health and safety.
  • Basic competency with computers including MS Office and recipe management software is preferred.

Main Responsibilities

  • Prepare and produce pastry items daily following established recipes and presentation protocols.
  • Create a range of desserts and baked goods including cakes, creams, sauces, fillings, and garnishes for various hotel outlets, banquets, room service, and special events.
  • Maintain consistency in quality, portion control, and presentation of all pastry products.
  • Organize mise-en-place for the pastry section to ensure smooth operation.
  • Inspect quality and freshness of pastry goods before service.
  • Assist bakery production and adapt to work across pastry and bakery sections as needed.
  • Manage proper storage, rotation, labeling, and handling of ingredients and products in line with FIFO and food safety standards.
  • Monitor food costs and help reduce waste, overproduction, and spoilage.
  • Supervise junior pastry staff, offering guidance, training, and coaching on techniques, hygiene, and safety.
  • Ensure all pastry equipment and workspaces are clean, maintained, and report faults timely.
  • Support special menus, seasonal promotions, events, and custom guest requests.
  • Contribute to positive teamwork and communication within kitchen departments.
  • Adhere strictly to sanitation, hygiene, and safety protocols.
  • Attend departmental meetings and maintain professional behaviour representing the hotel brand respectfully.
  • Keep updated with the latest pastry techniques, ingredient knowledge, and industry trends.

Customer Service

  • Maintain pastry product quality that enhances guest satisfaction.
  • Accommodate dietary restrictions and allergies following safety standards.
  • Respond professionally to guest feedback and share with supervisory chefs.
  • Support professional and courteous service by all culinary staff.

Financial Responsibilities

  • Assist in managing food costs by monitoring ingredient use, storage, and production efficiency.
  • Minimize food waste and prevent equipment damage.
  • Help maintain inventory control and flag supply issues promptly.

Other Duties

  • Uphold personal grooming and hygiene standards at all times.
  • Maintain confidentiality concerning hotel and guest information.
  • Comply with the hotel's employee handbook including rules on hygiene, fire safety, and security.
  • Step in to assist other kitchen sections and fulfill management directives as required.
