Job description
Role Overview
This position involves preparing special dishes and substituting ingredients as needed. Responsibilities include regulating cooking equipment temperatures such as ovens, grills, and roasters, and managing thawing procedures by removing frozen foods to defrost in refrigerators. The chef must ensure appropriate portion sizes, presentation, and garnishing standards. Accurate food records and quality control are essential. Communication about support needs during busy periods and notifying the kitchen head about surplus food for daily specials are key duties.
The Chef de Partie also updates Food and Beverage service staff on rejected items and menu specials availability. Maintaining food quality by adhering to recipes, quality standards, presentation protocols, and food preparation checklists is mandatory. Preparation of cold dishes is included.
The role involves supporting management efforts in hiring, training, staffing, evaluating, counseling, disciplining, motivating, and coaching staff, serving as a professional example. Compliance with company and safety policies, reporting incidents and unsafe conditions, and completing safety trainings and certifications are required. Proper uniform and personal appearance maintenance and safeguarding company assets and proprietary information are expected.
Anticipating and attending to guest service needs, communicating clearly and professionally, fostering positive workplace relationships, supporting team objectives, and responding appropriately to coworkers' concerns are emphasized to uphold service standards and quality expectations.
Physical demands include prolonged standing, sitting, or walking; stretching overhead and below the knees; bending, twisting, and stooping; and moving or lifting objects up to 25 pounds unaided. Additional reasonable tasks may be assigned by supervisors.
Qualifications
- Technical, trade, or vocational school diploma preferred.
- Minimum three years of related work experience required.
- No supervisory experience necessary.
- No licenses or certifications required.
