Role Overview
Defence Bakery invites applications for an experienced Food & Beverage Manager to lead service delivery within its catering division. The focus is on managing food and beverage operations for high-profile embassy, diplomatic, and premium corporate events. Ideal candidates will combine polished hospitality skills with strong financial management, capable of overseeing formal plated dinners and expansive buffet events while closely monitoring profitability.
Key Responsibilities
- Plan and direct complete food and beverage services for embassy, diplomatic, and elite catering events, maintaining correct protocol standards throughout.
- Manage wine presentations, plated service, and buffet arrangements, ensuring uniformity in style, timing, and guest satisfaction.
- Design cuisine and beverage offerings by curating menus and pairings spanning Indian, continental, and international dishes including wines, spirits, and cocktails.
- Calculate and track event profitability by coordinating costing, pricing strategies, and margin monitoring alongside operations and finance teams.
- Establish and maintain a trusted vendor network to facilitate temporary staffing, equipment provision, and services according to event needs.
- Hire, mentor, and supervise on-site service personnel and captains to guarantee professional execution at every function.
- Collaborate closely with kitchen, procurement, and event management teams to ensure flawless service delivery.
- Maintain hygiene, safety, and quality standards across all catering operations.
- Engage with clients and guests with discretion and elegance suited to diplomatic and luxury contexts.
Qualifications and Experience
- Mandatory qualification: Degree or diploma in Hotel Management.
- 6 to 8 years in relevant roles, preferably with experience in embassy/diplomatic catering, luxury catering, or five-star hotel environments.
- Practical knowledge of wine service, plated dining service, and buffet systems.
- Familiarity with global cuisines, beverage service, and cocktail preparation.
- Proven vendor management and resource networking skills for ad-hoc event requirements.
- Strong commercial aptitude with proficiency in calculating event profitability.
- Excellent interpersonal, presentation, and poise skills for high-profile, protocol-driven engagements.
- Flexibility to work varied hours, including evenings and weekends, depending on event schedules.
- Note: Travel within the city is required.
