Job Role Overview

We are seeking a skilled Bakery Manager to oversee bakery production, plan operations, enforce food safety and quality control, manage staff, monitor inventory and equipment, optimize costs, and drive continual process improvements. The ideal candidate merges profound bakery production expertise with sharp commercial insight, strong leadership abilities, operational rigor, and a dedication to product consistency and customer satisfaction.

Primary Responsibilities

  • Create and supervise bakery production schedules on a daily, weekly, and seasonal basis.
  • Manage all stages including preparation, mixing, proofing, baking, cooling, decorating, slicing, and packaging.
  • Guarantee that production aligns with official recipes, specifications, quality benchmarks, and client needs.
  • Organize production planning reflecting demand predictions, orders, capacity, and stock levels.
  • Track consumption of raw materials, production yields, waste, and product losses.
  • Administer inventory for bakery ingredients such as flour, yeast, dairy, eggs, fats, sugars, fillings, toppings, and packaging.
  • Maintain precise recipes, formulas, batch documentation, and production records.
  • Ensure accurate weighing, batching, portioning, and control throughout processes.
  • Supervise fermentation, dough development, proofing, baking temperatures, and cooling protocols.
  • Set and uphold product standards regarding look, texture, flavor, weight, freshness, and packaging quality.
  • Lead food safety initiatives covering HACCP, GMP, sanitation, allergen management, traceability, and hygiene practices.
  • Manage allergen separation, labeling, storage, and appropriate handling.
  • Investigate defects, customer feedback, deviations, and quality failures, implementing corrective and preventive measures to avoid recurrence.
  • Maintain high standards in personal hygiene, workplace cleanliness, and sanitation.
  • Schedule and oversee cleaning and sanitation of production zones, equipment, utensils, and storage facilities.
  • Monitor bakery machinery and coordinate maintenance to reduce downtime and prevent production disruptions.
  • Supervise ovens, mixers, proofers, sheeters, depositors, conveyors, refrigeration units, and packaging machinery.
  • Improve production line capacity, labor deployment, equipment use, and workflow efficiency.
  • Direct bakery workforce including supervisors, bakers, pastry chefs, decorators, packers, and support staff.
  • Plan staffing and production shifts based on workload and business demands.
  • Train personnel on recipes, processes, safety, hygiene, equipment operations, and quality standards.
  • Evaluate employee performance, attendance, productivity, and adherence to operational practices.
  • Encourage a culture centered on accountability, teamwork, safety, quality, and continuous advancement.
  • Coordinate ingredient procurement with purchasing and supply chain teams.
  • Monitor supplier performance regarding ingredient quality, delivery timelines, and material availability.
  • Manage stock to avoid expiration, obsolescence, or excessive inventory.
  • Work jointly with warehouse and logistics for optimal storage conditions and product flow.
  • Ensure finished goods are stored, handled, and shipped under proper conditions.
  • Oversee production budgets, including labor, ingredient, packaging, utilities, and other operational expenses.
  • Identify and implement cost-saving and efficiency-enhancing strategies such as improving recipe yield and reducing waste.
  • Support new product development processes, trials, testing, and scaling for commercial production.
  • Prepare bakery facilities for various audits and ensure compliance with food safety, health, labor, environmental, and regulatory standards.
  • Utilize operational data analytics to track trends and uncover improvement opportunities.
  • Introduce Lean manufacturing, 5S, waste minimization, and process enhancements where applicable.
  • Develop contingency plans for equipment failures, supply shortages, or other operational disruptions.
  • Collaborate with sales and commercial teams to manage promotions, seasonal demands, and special requests.
  • Maintain transparent communication with senior management and provide detailed reports on all operational aspects.

  • Demonstrated success managing bakery or food production operations.
  • Comprehensive knowledge of commercial baking techniques and equipment operation.
  • Expertise in dough handling, fermentation, proofing, baking, cooling, finishing, and packaging processes.
  • In-depth understanding of food safety systems such as HACCP, GMP, sanitation, allergen control, and traceability.
  • Experience managing production teams and running shift-based workflows.
  • Strong capabilities in production planning, inventory oversight, and cost control.
  • Proficiency with quality assurance protocols, product specifications, and problem resolution.
  • Excellent organizational, analytical, and decision-making skills.
  • Effective multitasking and the ability to meet strict deadlines.
  • Skilled in managing supplier relationships and cross-functional collaboration.
