Role Overview

The Stewarding Supervisor oversees the daily activities within the Stewarding Department, guaranteeing exceptional standards of cleanliness, sanitation, hygiene, and safety throughout all kitchen and back-of-house spaces. This leadership role entails guiding and supporting the stewarding team, managing daily task allocation, maintaining inventory of supplies, and enforcing adherence to HACCP, food safety protocols, and hotel policies. Collaboration with departments such as Kitchen, Food & Beverage, Housekeeping, and Engineering is key to maintaining seamless operations while reducing waste, breakages, and operational expenses.

Key Responsibilities

  • Manage and coordinate the daily functions of the Stewarding Department.
  • Ensure cleanliness and upkeep of kitchen, restaurant, banquet, and back-of-house areas.
  • Lead, train, and motivate stewarding personnel to uphold service and hygiene standards.
  • Plan daily work assignments, prepare schedules, and track attendance and productivity.
  • Oversee sanitation and cleaning processes for kitchen equipment, utensils, crockery, cutlery, and workspaces.
  • Monitor dishwashing and pot-washing operations to maintain consistent quality.
  • Ensure strict compliance with HACCP, food safety, hygiene, health & safety, and hotel standards.
  • Perform frequent inspections of kitchens, waste areas, storage, and back-of-house facilities.
  • Oversee proper use, storage, and handling of cleaning agents and equipment.
  • Maintain adequate inventories of cleaning materials, chemicals, and stewarding tools; arrange for timely replenishment.
  • Reduce breakage, waste, and avoid unnecessary use of chemicals, water, and other resources.
  • Collaborate with related departments to ensure efficient and uninterrupted operations.
  • Provide support during banquets and special occasions by ensuring availability of equipment, crockery, glassware, and staff.
  • Implement garbage segregation, disposal, recycling, and advanced waste management procedures.
  • Report maintenance issues, equipment damage, and safety concerns promptly to the responsible teams.
  • Keep accurate documentation regarding inventory, damages, cleaning rosters, and departmental checklists.
  • Conduct daily briefings to communicate operational guidelines, policies, and standards to the stewarding team.
  • Train members on safe working techniques and correct chemical and equipment usage.
  • Assist management with budgeting, manpower allocation, cost controls, and performance targets.
  • Ensure adherence to hotel brand standards and actively participate in hygiene audits.
  • Respond quickly to operational needs to support a safe and productive working environment.

Qualifications

  • High School Diploma or equivalent required; a Hospitality or Hotel Management Diploma is an advantage.
  • At least two years' experience in stewarding roles, ideally within a hotel or resort setting.
  • Previous experience in supervisory or leadership roles is preferred.
  • Familiarity with HACCP, food safety regulations, hygiene, sanitation, and occupational health & safety standards.
  • Strong communication, leadership, and organizational capabilities.
  • Ability to lead and motivate a diverse, multicultural team.
  • Capability to perform effectively under pressure in a dynamic hotel environment.
