Role Summary
We are inviting a skilled Steamer to join our Shang Palace culinary team. This role focuses on preparing and steaming a broad variety of Chinese dishes, including dim sum and seafood, following specific standards to ensure consistent quality and presentation.
Key Responsibilities
- Prepare and steam dim sum, seafood, meats, vegetables, and other items adhering to Shang Palace culinary standards.
- Consistently present steamed dishes per defined recipes and plating requirements.
- Conduct daily mise en place and prep ingredients required for steaming operations.
- Carefully monitor steaming duration, temperature, and cooking techniques to uphold food quality and safety.
- Inspect all ingredients for freshness and quality before cooking.
- Maintain hygiene and cleanliness of steaming areas, kitchen tools, and workspaces continuously.
- Properly store, label, and rotate food items following HACCP food safety protocols.
- Assist with inventory management, replenishing stock, and minimizing food waste.
- Support the culinary team and chefs during daily services, promotions, and special occasions.
- Comply fully with hotel policies, food safety regulations, and health & safety standards.
Candidate Requirements
- At least 2 years’ relevant experience working in a Chinese kitchen, preferably within a hotel or high-volume restaurant.
- Proven experience in crafting steamed Chinese dishes, dim sum, or Cantonese specialties.
- Solid understanding of food preparation methods, kitchen workflows, and Chinese cooking techniques.
- Knowledgeable about food safety, sanitation practices, and HACCP standards.
- Able to perform well under pressure in a fast-paced kitchen setting while maintaining quality.
- Strong collaborator with effective communication skills and a positive professional demeanor.
- Detail-oriented with dedication to consistent food quality and presentation.
- Flexibility to work various shifts, including weekends and public holidays.
