Overview
Join Hilton's dynamic Hotels team as a Sous Chef, playing a central role in managing kitchen operations and delivering outstanding culinary experiences that brighten each guest's day. You will be instrumental in executing our banquet culinary vision while ensuring smooth and delicious food preparation and service.
Key Duties and Responsibilities
- Lead and provide hands-on guidance and coaching to the banquet kitchen team to ensure effective culinary operations.
- Organize, plan, and oversee daily banquet food production based on event schedules, ensuring efficient preparation and presentation for meetings, weddings, conferences, and special events.
- Support menu innovation by assisting with seasonal menus, promotions, and daily specials.
- Encourage collaboration between Front of House and Back of House departments for seamless service delivery.
- Assist in administrative tasks including inventory control, ordering supplies, and staff scheduling.
- Ensure strict adherence to health, safety, sanitation, and alcohol-related regulations to guarantee guest and team member safety.
Qualifications and Experience
- Completion of high school diploma; culinary or hospitality education preferred.
- At least 5 years cooking experience in banquet, main, or pastry kitchens at high-quality restaurants or 5-star hotels.
- Minimum 3 years experience as a Chef de Partie or at least 1 year in a comparable role within an international hotel brand.
- Experience managing kitchen teams in fast-paced banquet settings is essential.
- Strong skills in time management, prioritizing tasks, and solving problems under pressure.
- Proficient in food cost control, inventory management, and portioning techniques.
- Comprehensive knowledge of HACCP standards and food safety/sanitation requirements.
- Demonstrated leadership with team development abilities.
- Excellent communication and interpersonal skills.
- Preference for candidates with international hotel chain experience.
- Willingness to work on a rotating roster including weekends and public holidays.
