About Pesky Fish

Pesky Fish is experiencing rapid expansion and seeks to transform seafood consumption to aid in restoring fish populations and marine ecosystems. Role Overview and Responsibilities

  • Expertly hand-filleting, skinning, de-boning, portioning, and trimming various species including roundfish, flatfish (such as turbot, brill, plaice), trout, and shellfish with precision.
  • Employ established filleting and block-cutting procedures to reduce waste and maximize yield from all fresh fish types.
  • Conduct initial inspections of incoming fish for freshness, correct temperature, and presentation, reporting concerns to the Master Blockman.
  • Collaborate closely with the Master Blockman to meet daily cutting goals, process customer orders, and adhere to packing deadlines.
  • Develop advanced skills through ongoing knife technique training and mentorship from experienced filleters.
  • Assist the packing department by ensuring fish portions are properly iced, vacuum-sealed, and packaged to maintain the cold chain for transport.
  • Maintain impeccable cleanliness of cutting stations, knives, and equipment during shifts, complying with HACCP and hygiene protocols.
  • Follow stringent temperature control measures to keep fish chilled and appropriately iced throughout processing.
  • Help record processing weights, batch numbers, and waste documentation within internal tracking systems.

Experience and Qualifications

Essential:

  • 1–2 years of practical experience in commercial fish processing, working at fishmongers, markets, or food preparation kitchens.
  • Competent foundational knife skills for safely and neatly filleting major round and flatfish varieties.
  • Knowledge of knife maintenance (sharpening and steeling), station hygiene, and strict usage of personal protective equipment including chainmail gloves, aprons, and safety boots.
  • A strong work ethic and eagerness to learn from senior colleagues to develop professional fish filleting expertise.

Desirable:

  • Level 2 Award in Food Safety for Manufacturing, or willingness to obtain this qualification.
  • Basic grasp of food hygiene standards and temperature control requirements.
  • Possession of a valid UK driving license.

  • Annual base salary of £35,000 for full-time employment.
