Located at Pier One Sydney Harbour, surrounded by iconic landmarks, this full-time Executive Chef role offers a strategic leadership opportunity within one of Australia's premier lifestyle hotels. The position involves curating distinctive culinary experiences that blend Sydney’s waterfront charm, top-quality local ingredients, memorable guest interactions, and strong financial outcomes.
Key Responsibilities
- Establish and implement a unique culinary vision reflective of Pier One’s waterfront location and lifestyle ambiance.
- Oversee kitchen operations across multiple venues including restaurants, bars, in-room dining, events, weddings, banquets, and catering, ensuring consistent excellence in food quality and presentation.
- Create innovative menus, signature dishes, seasonal culinary events, and waterfront dining concepts to enhance Pier One’s reputation as a dining destination.
- Lead by example with a strong operational presence, setting high standards for quality, service, and professionalism.
- Foster a positive, professional culture within the kitchen based on trust, respect, accountability, and pride.
- Mentor and develop culinary leaders and staff, ensuring clear roles and responsibilities throughout the operation.
- Identify and nurture future talent through focused training, succession planning, and career progression initiatives.
- Address performance issues proactively and maintain an environment conducive to staff growth and success.
- Craft exceptional culinary experiences that deeply connect with guests and reflect the Pier One story.
- Engage with guests directly to gather feedback and continuously enhance food quality and the overall dining atmosphere.
- Collaborate closely with executive leadership, including departments such as Food and Beverage, Sales, Marketing, Events, Revenue, Finance, Human Resources, and Operations to meet hotel objectives.
- Manage culinary budgets, forecasts, labor productivity, food costs, procurement, menu engineering, and profitability with commercial acumen.
- Balance creativity with operational feasibility, maintaining quality while aligning production and staffing to business demands.
- Seek efficiencies, revenue growth opportunities, and improvements in the financial performance of all culinary activities.
- Maintain consistent standards across all food services within Pier One’s diverse venues.
- Promote sustainable practices including local sourcing, seasonal produce utilization, responsible procurement, reduction of food waste, and environmentally friendly kitchen operations.
- Ensure compliance with HACCP, food safety, hygiene, workplace safety, and Marriott International’s strict standards.
- Train culinary staff adequately in food handling, sanitation, safety protocols, and operational requirements.
