Overview
Join the prestigious Shangri-La Group in Abu Dhabi as an Executive Chef, where you will take charge of all culinary operations across the Shangri-La and Traders Hotels. This role requires an accomplished culinary leader to deliver extraordinary quality, creativity, and consistency in food services throughout multiple dining venues, banquet services, and in-room dining.
Key Responsibilities
- Deliver strategic leadership overseeing the entire culinary department, reporting directly to the Complex General Manager.
- Manage and coordinate food preparation and presentation across restaurants, bars, banquet halls, and events ensuring top-tier standards and guest satisfaction.
- Develop innovative seasonal menus and recipes that align with brand standards while maintaining profitability.
- Monitor and control food costs, inventory, purchasing processes, labor efficiency, and kitchen budgets to meet financial goals.
- Hire, train, and mentor kitchen staff, fostering a culture focused on teamwork, innovation, and continuous growth.
- Ensure strict adherence to food safety regulations, HACCP guidelines, hygiene practices, and maintain a safe, compliant kitchen environment.
Candidate Profile
- Possesses exceptional culinary skills with comprehensive knowledge of both international and regional cuisines.
- Demonstrates strong leadership qualities with the ability to inspire and manage a diverse culinary team effectively.
- Expertise in menu design, recipe creation, and exceptional food presentation.
- Strong financial insight including budgeting, cost management, labor optimization, and inventory control.
- In-depth understanding of food safety standards, hygiene, and kitchen compliance protocols.
- Creativity and a steadfast focus on delivering superior guest experiences.
- Preferred qualifications include a diploma or degree in culinary arts, hospitality management, or related disciplines; certifications such as HACCP, culinary leadership, nutrition, or international cuisine are an advantage.
- Minimum 10 to 15 years of progressive experience in luxury hospitality culinary roles, including at least 2 years as an Executive Chef.
- Proven track record managing various dining formats like à la carte, all-day dining, banquets, room service, and specialty restaurants, with successes in menu innovation and operational excellence.
- Experience leading multicultural teams while maintaining exceptional guest satisfaction ratings.
