Overview

We are seeking a dedicated Dosa Master to join the Kitchen Operations team, reporting directly to the Kitchen Manager or Corporate Chef. This full-time role is based at our restaurant or central kitchen in Pune, Maharashtra. The primary responsibility is to create authentic South Indian dosas with high quality, speed, and hygiene while adhering to taste standards and ensuring customer satisfaction.

Key Responsibilities

  • Prepare a diverse range of dosas, such as plain, masala, ghee roast, podi, onion, set dosa, and uttapam.
  • Properly manage dosa batter including fermentation, consistency, and storage procedures.
  • Maintain optimal tawa temperature and ensure uniform spreading of the batter.
  • Ensure dosas are consistent in flavor, texture, and presentation.
  • Efficiently manage large order volumes during peak business hours.
  • Adhere to kitchen SOPs, recipes, and portion control measures.
  • Keep the workstation and equipment clean and hygienic.
  • Collaborate and coordinate effectively with helpers, runners, and service personnel.
  • Minimize wastage and report daily ingredient requirements.
  • Strictly follow food safety and hygiene standards at all times.

Experience and Skills Required

  • A minimum of 2 to 5 years experience as a Dosa Master.
  • Extensive knowledge of South Indian, Tamil, and Udupi-style dosas.
  • Preferably experienced in high-traffic restaurant environments.
  • Capability to handle pressure and operate multiple tawas concurrently.
  • Understanding of food safety and hygiene protocols.

Working Conditions

Working hours align with the restaurant's operational schedule, with off days governed by company policy.

Compensation and Benefits

  • Monthly salary from ₹17,000 to 20,000, commensurate with experience and trial performance.
  • Food and accommodation provided according to company standards.
