About the Company
Raffles & Fairmont The Red Sea is situated within the Kingdom’s innovative Red Sea Project, offering guests a nature-centric resort experience. Featuring 361 rooms alongside eleven unique dining venues—including overwater restaurants boasting views of the Red Sea and surrounding mangroves—and a spa, this property is set to redefine sustainable hospitality. It spans 200 km of pristine coastline with an archipelago of over 90 untouched islands, dormant volcanoes, vibrant marine ecosystems, and ancient archaeological sites.
Role Overview and Responsibilities
- Deliver consistently professional, amiable, and proactive service to guests while supporting team members.
- Prepare all food items for both à la carte and buffet menus adhering strictly to hotel recipes and quality standards.
- Contribute ideas, feedback, and suggestions during daily shift briefings.
- Ensure all kitchen staff understand and uphold expected standards.
- Maintain open communication channels with Outlet Chefs regarding guest feedback.
- Carry out daily inspections of mise en place to verify freshness and quality.
- Manage product rotation in chillers meticulously to prevent waste and spoilage.
- Possess thorough knowledge of all menu selections, daily specials, and ongoing promotions.
- Keep all workstations, utensils, and equipment clean and well-maintained.
- Comply with kitchen operation policies, procedures, and service criteria.
- Adhere to all safety and hygiene guidelines during food and beverage handling.
- Perform other tasks as assigned by management.
Qualifications and Skills
- Proven prior experience in culinary environments.
- Possession of journeyman certification or an internationally recognized equivalent.
- A diploma in a culinary discipline is preferred.
- Basic computer literacy, particularly in Microsoft Windows applications, is advantageous.
- Strong interpersonal and problem-solving skills.
- Ability to maintain composure and efficiency under pressure in a fast-paced setting.
- Demonstrated ability to collaborate effectively within a team.
- Focused attention on guest requirements, maintaining calm and courteous interactions consistently.
Additional Information
- Comprehensive understanding of ultra-luxury guest expectations and brand standards.
- Experience in project coordination, scheduling, and document management during pre-opening phases.
- Pre-opening work experience is highly desirable.
- Regional work experience is essential.
- A proactive mindset with a strong sense of ownership and accountability.
- Exceptional grooming and personal presentation in line with luxury hospitality standards.
