Key Responsibilities
- Assist in preparing, trimming, cutting, and portioning meats, poultry, and other butchery products in line with set standards.
- Adhere to recipes, portion controls, and approved preparation procedures to maintain uniform quality, yield, and presentation.
- Receive, inspect, and properly store meat products following food safety and inventory management guidelines.
- Ensure readiness of ingredients, equipment, and workspaces daily for production activities.
- Support the Chef de Partie, Butcher, and culinary team to ensure efficient operations within the butchery section.
- Uphold elevated standards of food preparation, hygiene, and sanitation within the butchery and kitchen areas.
- Monitor inventory, minimise wastage, and apply proper storage, labelling, and stock rotation practices.
- Operate knives, machinery, and butchery tools safely, reporting any damages or hazards promptly.
- Comply with all food safety, occupational health and safety regulations, and company policies.
- Maintain a clean, orderly, and safe work environment at all times.
- Work independently or collaboratively to consistently deliver high-quality outcomes.
Requirements and Qualifications
Candidates should hold a relevant culinary certification or formal butchery training and possess prior experience in professional kitchens, hotels, or butchery operations. Essential knowledge includes meat preparation techniques, portion control, food safety standards, and general kitchen procedures. The ideal applicant is passionate, organised, reliable, and eager to learn, with availability to work shifts including weekends and public holidays as needed by operational demands.
