Job description
About the Role
The Chief Steward is responsible for overseeing the daily kitchen utility operations and managing the kitchen support team. Key areas under supervision include dishwashing operations, night cleaning, maintenance of back dock areas, banquet plating, and food delivery. This role focuses on increasing both guest and staff satisfaction while adhering to the operational budget.
Key Duties
- Procure and manage necessary supplies, ensuring all staff have appropriate tools, equipment, and uniforms.
- Plan and schedule events and team activities while organizing staff work schedules.
- Track incoming materials and maintain inventory levels for food, equipment, smallwares, liquor, china, glass, and silver.
- Conduct frequent inspections to maintain service quality, safety, and sanitation compliance.
- Investigate and follow up on any employee incidents or accidents.
- Ensure all dishwashing machines and food transportation equipment are properly operated and maintained.
- Maintain strict adherence to food handling, sanitary standards, and regulatory requirements.
- Communicate updates efficiently with executives, peers, and team members.
Team Leadership
- Lead and motivate the kitchen support team using effective communication and interpersonal skills.
- Manage daily operations and serve as a role model by demonstrating appropriate professional behaviors.
- Set and monitor performance standards, team goals, and budget objectives.
- Recognize and celebrate team achievements, fostering trust and cooperation.
- Ensure clear communication of job expectations and cultivate a collaborative work environment.
- Engage employees in feedback processes to improve service and productivity.
Customer Service Excellence
- Attend meetings to coordinate with management and peers on elevating service quality.
- Focus on guest satisfaction as a priority in all departmental efforts and meetings.
Human Resource Management
- Recruit, train, supervise, and discipline kitchen utility staff consistently and fairly.
- Monitor and provide feedback on employee performance, safety, and adherence to procedures.
- Review employee satisfaction data and address concerns proactively.
- Ensure training on sanitation, equipment use, and chemical safety is delivered and understood.
- Apply progressive discipline measures when necessary per company policies.
Candidate Profile
Education and Experience:
- High school diploma or GED with at least 5 years in procurement, food and beverage, culinary, or related roles;
- OR A two-year degree in Hotel and Restaurant Management, Hospitality, Business Administration, or a related field with 5 years of relevant experience.
