Role Overview
We are seeking a dedicated Chef de Partie to join our Merlot Restaurant kitchen team. This full-time role is ideal for a qualified culinary professional with proven experience in a commercial kitchen who can confidently manage a designated kitchen station, ensuring consistent delivery of high-quality dishes and memorable dining experiences.
Key Responsibilities
- Prepare and cook dishes to ensure consistent high standards of quality and presentation.
- Take ownership of a specific kitchen section, ensuring operational excellence.
- Complete mise en place to fully prepare the section ahead of service.
- Maintain quality control over presentation, portion sizes, and consistency throughout preparation and service periods.
- Contribute to menu preparation, development, and execution.
- Assist in stock control, managing orders, and inventory processes.
- Monitor and manage portion control and food wastage, optimizing ingredient usage.
- Collaborate closely with the Head Chef, Sous Chef, and kitchen colleagues for smooth kitchen operations.
- Coordinate with front-of-house staff during service for seamless customer experiences.
- Provide guidance and support to junior chefs and commis chefs, demonstrating proper cooking techniques.
- Adhere to strict food safety, hygiene, and workplace health and safety standards.
- Ensure all kitchen equipment, workstations, and storage areas are maintained to required cleanliness and operational standards.
- Support kitchen leadership in maintaining food quality consistency and enhancing operational efficiency.
Candidate Profile
- Hold a relevant commercial cookery or culinary qualification, or possess equivalent industry experience.
- At least 2 years of professional experience in a restaurant, hotel, or similar commercial kitchen.
- Previous expertise as a Chef de Partie or similar role managing kitchen sections independently.
- Strong skills in food preparation, cooking techniques, and presentation.
- Comprehensive knowledge of food safety and hygiene practices.
- Understanding of portion control, food waste reduction, and stock management.
- Capability to perform effectively under busy service conditions.
- Excellent communication skills and ability to work collaboratively within a team.
- Flexibility to work varied shifts including evenings, weekends, and public holidays.
