Role Responsibilities

  • Prepare and present dishes ensuring the highest quality standards and memorable guest experiences.
  • Collaborate with Sous Chef and Executive Head Chef on menu planning and food preparation.
  • Strictly adhere to recipes and plating presentation standards.
  • Manage portion control and reduce waste to support profitability and sustainability objectives.
  • Monitor inventory levels and maintain product quality in line with hotel standards and guest volume.
  • Supervise and assist junior kitchen team members and porters during daily operations.
  • Provide mentorship on culinary standards and innovative presentation consistent with the Red Carnation brand.

Candidate Profile

  • Demonstrated experience as a Chef de Partie or in a similar role within a luxury hospitality context.
  • Passion for cooking and presentation with meticulous attention to detail and dedication to quality.
  • Solid knowledge of food safety, hygiene practices, and allergen management; relevant certifications would be advantageous.
  • Strong organizational and time management abilities enabling effective service delivery even during peak periods.
  • Capability to lead and develop junior kitchen staff fostering collaboration and motivation.
  • Adaptable, proactive approach ready to respond to the evolving needs of the business and team.
  • Ability to maintain composure and positivity under pressure within a fast-paced environment.
