Job description
Role Overview
The Chef de Partie will be responsible for preparing specialty and alternative dishes, regulating the temperature of various cooking equipment such as ovens and grills, and ensuring proper thawing and storage of frozen food items. This position also involves monitoring portion sizes, garnishing, food quality and quantity, as well as maintaining food logs.
Key Responsibilities
- Prepare special meals and substitute dishes following recipe standards.
- Manage cooking equipment temperatures including ovens, grills, and broilers.
- Handle defrosting procedures by transferring food from freezers to refrigerators.
- Ensure correct portioning, presentation, and garnishing of prepared dishes.
- Keep accurate records of food production and inventory.
- Monitor food quality and quantity during preparation stages.
- Request assistance during peak demand periods.
- Advise the chef about surplus food for daily specials.
- Update the Food & Beverage staff on discontinued items and menu specials.
- Maintain high food quality standards in preparation and presentation.
- Prepare cold dishes as required.
- Support management with hiring, training, scheduling, evaluating, motivating, and mentoring team members; act as a role model.
- Adhere strictly to all chain safety policies and procedures; report maintenance needs, accidents, or unsafe conditions.
- Maintain personal hygiene and professional appearance; protect confidential information and company assets.
- Anticipate and respond promptly to customer service needs using clear and polite communication.
- Foster positive, cooperative work relations within the team, addressing concerns constructively.
- Comply with quality requirements and standards at all times.
- Be physically capable of standing, sitting, moving for long periods; reach overhead and below knee level; lift, move, or push items up to 25 pounds unaided.
- Perform other reasonable duties as requested by supervisors.
Qualifications
- Technical, trade or vocational diploma from a recognized institution.
- Minimum of three years' relevant work experience.
- No supervisory experience required.
- No licenses or certifications stipulated.
