Job description

Position Overview

The Chef de Partie is responsible for preparing specialized dishes, managing food preparation processes including regulating cooking temperatures, thawing ingredients appropriately, and ensuring meals meet presentation and portion standards. The role requires maintaining food logs, monitoring food quality and quantity, communicating needs during peak times, and informing both chefs and service staff about menu specials and stock availability. Preparation and cooking must adhere strictly to recipes and quality guidelines.

Key Responsibilities

  • Prepare and cook various dishes including cold items following established recipes and standards.
  • Manage temperature controls for cooking equipment such as ovens, grills, and broilers.
  • Ensure proper thawing and storage of food items.
  • Maintain accurate food logs and monitor quality and portions of food prepared.
  • Communicate additional assistance requirements during busy periods to the team.
  • Notify chefs of surplus food items suitable for daily specials.
  • Advise Food & Beverage staff on menu specials and stock shortages.
  • Comply with safety and hygiene protocols, reporting any unsafe conditions or maintenance issues.
  • Support management in staff-related tasks including hiring, training, scheduling, evaluating, counseling, and motivating team members.
  • Act as a role model and uphold company standards on appearance and confidentiality.
  • Engage with guests professionally to meet service expectations and work cohesively within the team.
  • Perform physically demanding activities such as prolonged standing, bending, lifting objects up to 25 pounds, and other duties as assigned.

Qualifications and Experience

  • Technical, Trade, or Vocational School degree preferred.
  • Minimum of 3 years of relevant culinary experience.
  • No supervisory experience required.
  • No licenses or certifications specified.

This position is based at 71 Sea World Drive, Main Beach, Gold Coast, Queensland, Australia. It is a non-management, full-time role with no remote work option.
