About the Role

Mandarin Oriental Downtown, Dubai is seeking an Assistant Steward to join the stewarding team, responsible for leading and overseeing stewarding activities to maintain cleanliness, hygiene, and equipment upkeep in all back-of-house areas. The role supports compliance with safety standards while facilitating smooth and efficient service delivery. The Assistant Steward reports directly to the Director of Back of House.

Key Responsibilities

  • Assist the Back of House Manager in managing the entire stewarding operations including staff scheduling, liaising with other departments, evaluating team performance, and upholding cleanliness across all back-of-house zones.
  • Supervise stewarding tasks such as dishwashing, waste management, and ensuring hygiene and cleanliness standards are met, while maintaining operational equipment effectively.
  • Oversee inventory and stock control of operational materials, manage chemical usage prudently, and contribute to cost reduction by minimizing breakage and losses.
  • Promote adherence to health, safety, and environmental regulations by reporting incidents promptly, supporting pest control procedures, and participating in HACCP and FLHSSE compliance efforts.
  • Conduct regular inspections, attend departmental meetings, assist with urgent food and beverage support requests, and perform any additional duties assigned by the management.

Candidate Profile

  • A minimum of a high school diploma required; a Degree or Higher National Diploma in Hospitality, Hotel, or Business Management is preferred.
  • At least two years of leadership experience in stewarding within a five-star luxury hotel, preferably as an Assistant Manager or Senior Supervisor.
  • Experience working in the Middle East (UAE, Bahrain, Saudi Arabia, Qatar) and proven involvement in hotel pre-opening or renovation projects is highly advantageous.
  • Strong leadership skills to effectively manage and inspire diverse multicultural teams while ensuring operational excellence.
  • Excellent organizational abilities to manage complex tasks, coordinate external events, and enforce departmental policies aligned with hotel standards and regulations.
  • Thorough knowledge of food safety protocols, dishwashing equipment operation, and chemical handling, with a commitment to maintaining hygiene and safety standards.
