Overview
Join Singapore Airlines as a Catering Manager to lead the culinary direction of inflight and lounge dining experiences, emphasizing Indian gastronomy. Your role will involve crafting menus that balance authenticity, innovation, cost-efficiency, and operational feasibility at cruising altitude.
Key Responsibilities
- Design and develop inflight and lounge menu selections highlighting classic and modern Indian dishes alongside global cuisine, incorporating local and seasonal ingredients that meet aircraft and lounge service constraints.
- Collaborate with internal departments to enhance customer dining experiences across all cabin classes; develop and implement food and beverage promotions such as Indian festival-themed menus, special flight route or aircraft launches, and monthly featured items.
- Conduct competitive analyses, meal testing, and audits; gather and interpret crew and passenger feedback to foster continuous menu enhancements.
- Coordinate with catering vendors and station teams to uphold Singapore Airlines’ standards for quality, safety, and presentation; oversee plating guidelines and ensure adherence to budgetary restrictions.
- Manage proactive menu planning and serviceware inventory to preempt disruptions; contribute to various food and beverage initiatives as required.
- Engage cross-functionally with Customer Experience, Procurement, Operations, and Marketing teams; utilize advanced menu planning and analytics platforms including emerging technologies such as Generative AI; prepare comprehensive presentations for stakeholders and senior management.
Candidate Requirements
- A culinary degree or comparable senior-level culinary leadership experience is required; ideally with over eight years in managing premium hospitality food and beverage programs.
- Expertise in regional Indian cuisine, both traditional and contemporary, with proven ability to adjust recipes for high-volume premium service environments; well-versed in global food trends and service methodologies.
- Comprehensive understanding of dietary restrictions including Indian vegetarian, Jain, halal, and other religious, medical, or lifestyle considerations.
- Experience in the aviation catering sector or other high-volume catering operations is advantageous.
- Highly motivated, innovative, and customer-focused, demonstrating strong leadership and effective stakeholder management coupled with diligent deadline adherence.
- Proficiency in Microsoft Office and familiarity with menu planning and analytics software; enthusiastic about adopting new technologies including GenAI.
- Fluent in English, with additional language skills such as Mandarin or Bahasa considered a plus.
