About the Restaurant
This fine dining Chinese restaurant is led by an award-winning chef and focuses on reinventing classic dishes through unique flavours and carefully selected ingredients. The establishment aspires to create an exceptional dining environment featuring high service standards and an experience engaging all senses, suitable for intimate meetings, business gatherings, or special events. The venue offers diverse seating arrangements to suit different occasions, conveniently located within walking distance from Bras Basah MRT and City Hall MRT stations.
Role Overview
Reporting directly to the Restaurant Manager, the Wine Sommelier is responsible for elevating the beverage service experience. This involves expertly pairing wines and other alcoholic drinks with food, improving sales through upselling strategies, leading the beverage team, and enhancing overall guest satisfaction.
Key Responsibilities
- Expertly pair alcoholic beverages with menu dishes to enrich guests' dining experience.
- Utilize upselling methods to increase beverage revenue while enhancing customer satisfaction.
- Manage the organization and arrangement of wines and spirits in cellars and cabinets according to the beverage list.
- Collect and communicate guest feedback regarding beverages to management for continuous improvement.
- Collaborate with management for upselling opportunities and inventory management.
- Maintain effective management of wine and liquor stocks to meet guest demand.
- Evaluate product quality and foster relationships with suppliers to ensure high standards.
- Implement strategic beverage sales techniques to maximize revenue.
- Possess thorough knowledge of all beverage menu items to deliver outstanding service.
- Supervise and coach team members, providing training to enhance their skills and service quality.
- Train service staff in wine knowledge, including presentation, opening, decanting, and serving techniques.
- Comply with sanitation and safety regulations consistently.
- Perform other assigned duties as required.
Preferred Qualifications and Skills
- Degree or certification in Wine and Spirits Education Trust (WSET) is preferred.
- 3 to 5 years of experience in beverage service or related roles.
- Experience in a preopening team is considered an asset.
- Demonstrates expert knowledge of wines, liquors, and cocktails.
- Proficient in recommending wine pairings tailored to food offerings.
- Strong communication and interpersonal skills.
- Exhibits leadership qualities with the ability to motivate teams effectively.
- Adaptable to flexible working hours, including shifts, weekends, split shifts, and public holidays.
