Role Overview

As the Sous Chef Baker, you act as the primary support to the Head Baker and play a crucial role in ensuring smooth bakery operations. You oversee the preparation, maintain quality, manage the bakery team through all production phases, and handle day-to-day discipline, schedule adherence, production pace, and food safety standards. You take charge in the Head Baker's absence.

Responsibilities

  • Apply expert knowledge of French and European baking techniques including sourdough, viennoiserie, bread fermentation, and pastry creation to produce consistent, high-quality baked products.
  • Lead, motivate, and manage the bakery team, ensuring efficient operation during preparation and busy production periods.
  • Manage the daily baking schedule, control production flow, and coordinate with front-of-house staff regarding fresh product availability.
  • Ensure compliance with HACCP, allergen management, temperature logging, hygiene standards, and consistently uphold food safety and quality.
  • Assist with inventory oversight, ingredient yield optimization, waste minimization, and supplier communication to balance quality and cost.
  • Support other departments as needed, reflecting the company’s flexible working culture.

Requirements

  • 5 to 7 years’ experience working in bakeries or pastry kitchens, with at least 2 to 3 years holding a senior baker position such as Sous Chef Baker, Head Baker, or similar within French artisan bakeries, patisseries, or European-style dining establishments.
  • Strong command of French and European baking techniques.
  • Certified in food safety with HACCP knowledge and allergen awareness.
  • Fluent in English; familiarity with French or another European language is advantageous.

Reporting and Department

Reporting directly to the Head Chef and operating within the Back of House/Bakery department.
