Job Summary
The Pastry Commis position involves overseeing the pastry section and delivering top-notch cakes and pastries utilizing both standard and creative recipes. The role demands consistency in product quality, rigorous hygiene standards, planning of production schedules, and crafting seasonal specialties.
Key Responsibilities
- Oversee daily pastry operations to maintain efficiency and high-quality output.
- Prepare a broad range of baked specialties including cakes, puffs, tarts, and both traditional and contemporary pastries.
- Create products such as cupcakes, sponge cakes, mousse, pound cakes, laminated pastries, sugar tarts, éclairs, and flaky items aligning with brand standards.
- Innovate and introduce new pastry creations and seasonal menu additions.
- Ensure all pastry items meet strict criteria for taste, presentation, and texture.
- Adhere to food safety measures and maintain product temperatures accurately.
- Decorate desserts creatively using diverse icings and toppings for appealing aesthetics.
- Delegate and monitor tasks among commis pastry chefs during preparation phases.
- Manage and supervise all pastry and dessert production and displays.
- Inspect ingredients and final products to verify quality compliance.
- Assist in developing decorative food presentations and plating strategies.
- Monitor ingredient stocks, such as flour, sugar, and chocolate, and order supplies responsibly within budget limits.
- Perform twice-monthly inventory audits with detailed record-keeping.
- Evaluate baking equipment conditions and promptly report any faults or hazards.
- Conduct weekly team meetings to discuss updates, plan tasks, and collect feedback.
- Encourage a collaborative and positive work environment among diverse coworkers.
- Maintain excellence in product quality, appearance, and flavor profiles.
- Ensure compliance with all relevant food hygiene, health, and safety regulations.
- Operate and care for pastry department equipment, reporting issues immediately.
- Maintain a clean and organized workspace to uphold hygiene standards.
- Promote teamwork through mutual respect, trust, and cooperation.
- Lead by example, demonstrating professionalism and strong work ethics.
- Motivate and guide pastry assistants and bakers to improve productivity.
- Keep the baking station lean, orderly, and compliant with health and safety protocols.
- Take responsibility for the performance and output of the pastry team.
- Manage HACCP documentation including product traceability, invoice verification, and temperature monitoring.
- Prepare weekly work schedules ensuring sufficient bakery and pastry team coverage.
- Submit weekly man-hour reports to Human Resources following standard templates.
- Track staff annual leave and public holiday entitlements.
- Print daily orders and update event and B2B orders accordingly.
- Maintain accurate inventory counts and forward reports to purchasing.
Required Qualifications and Skills
- Diploma or 2-year degree in Culinary Arts, Hotel and Restaurant Management, or a related discipline.
- A minimum of 2 years’ professional experience in pastry cooking and baking or a high-volume pastry chef capacity.
- Strong expertise in various pastry types, dessert crafting, and cake decoration techniques.
- Basic computer literacy to manage reports and scheduling tasks.
- Effective communication and interpersonal capabilities for team collaboration.
- Willingness to work in shifts, including weekends, days, afternoons, and evenings.
