About the Role

Ancora is celebrated as one of Vancouver's premier dining venues, renowned for its fresh, innovative seafood dishes that fuse diverse cultural flavors and techniques, set against a stunning waterfront backdrop. The Pastry Chef we seek will be an experienced professional who can independently prepare and craft a range of pastries, breads, and desserts maintaining the highest quality and presentation standards.

Key Responsibilities

• Prepare and execute recipes for cakes, pastries, laminated doughs, breads, tarts, and confections autonomously.
• Consistently produce pastry items adhering strictly to taste and aesthetic standards.
• Ensure safe food handling practices and maintain cleanliness in the preparation areas, including participation in daily kitchen sanitation at shift end.
• Operate and oversee equipment such as convection ovens, dough mixers, proofers, dough sheeters, and cold storage units.
• Guide and supervise kitchen staff in cooking, garnishing, and food presentation tasks.
• Manage requisitions and inventory of kitchen supplies and food items.
• Prepare bread and components for plated desserts.
• Collaborate with the chef in menu development by costing and conceptualizing dessert offerings.

Requirements

• A minimum of 4 years of professional experience in culinary food preparation as a chef or cook.
• Possession of a cook trade certification or equivalent culinary training and experience.
• Proficiency in conversational English is essential.
• Must hold current Food Safe certification.

Additional Information

• Position is full-time and permanent.
• Compensation includes wages plus tips.
• Work is conducted on-site at the Vancouver location.
