Full-Time Chef – Specialty Cafe & Kitchen

About the Position

We are currently seeking a skilled and passionate Full-Time Chef to lead culinary operations and menu preparation at TNB Cafe in Rooty Hill, Greater Sydney Area. This role requires an individual who thrives in a busy, modern cafe setting and is committed to delivering quality, speed, and consistent food presentation.

Key Responsibilities

• Develop, plan, and carry out breakfast, brunch, and lunch menu preparations that align with established cafe standards.
• Prepare, season, and cook dishes to meet recipe specifications and presentation criteria.
• Manage daily kitchen workflow, including station setup, service pacing during busy periods, and overall operational efficiency.
• Monitor inventory by controlling stock levels, portion sizes, minimizing waste, rotating ingredients, and coordinating orders with local suppliers.
• Ensure adherence to food safety regulations, HACCP guidelines, hygiene protocols, equipment upkeep, and workplace health and safety standards.
• Lead and mentor junior kitchen personnel and kitchen assistants to maintain high performance and service quality.

Qualifications and Requirements

• Possess a Certificate IV in Commercial Cookery or an equivalent culinary qualification, or alternatively, have at least three years of relevant full-time experience in commercial cooking.
• Demonstrated experience working as a Chef or Chef de Partie in fast-paced cafe, restaurant, or commercial kitchen environments.
• Strong expertise in food safety compliance, cost control of portions, and inventory management.
• Excellent communication skills, effective time management, and the capability to perform under pressure during peak service times.
• Must hold full legal working rights in Australia.

Compensation

The annual salary for this position is $85,280 AUD.
