Job description
Position Overview
Reporting to the Sous Chef(s) and Chef de Cuisine, the 1st Cook is responsible for crafting high-quality, made-to-order dishes according to established culinary standards. This position requires maintaining cleanliness and sanitation of workstations and kitchen tools.
Key Duties and Responsibilities
- Prepare ingredients by cutting and readying food for cooking.
- Organize and set mise en place daily for efficient kitchen operations.
- Create simple sauces, monitor, and taste all food items to ensure quality.
- Maintain a clean and sanitary work environment, adhering strictly to hygiene standards.
- Ensure all food served meets kitchen management's quality expectations.
- Assist in food presentation efforts across Banquets, Buffet, and Restaurant venues as needed.
- Fulfill daily culinary responsibilities across various kitchen departments depending on operational needs.
- Prepare food promptly and accurately for all food outlets.
- Supervise food outlets in the absence of Sous Chefs or the Chef.
- Build strong collaborative relationships with guests, team members, vendors, and regulatory bodies.
- Comply fully with licensing, health, safety, and other regulatory requirements.
- Undertake other tasks as assigned, fostering a positive and playful work attitude.
- Maintain focus and deliver memorable hospitality experiences to both internal and external guests.
Qualifications and Experience
- Strong alignment with Casino Nova Scotia's culture, emphasizing an engaging and guest-focused mindset.
- Holding a Culinary Inter-provincial Red Seal certificate is preferred.
- A minimum of 5 years of cooking experience, including 3 years as a 2nd Cook, is essential.
- Demonstrated background in Banquets, line cooking, and basic pastry within a hotel-style kitchen environment.
- Proven customer service capabilities working effectively with both staff and guests.
- Experience in Garde Manger, Pastry, and Saucier roles is advantageous.
- Excellent interpersonal, communication, and motivational skills with the ability to stay composed under pressure.
- Effective problem-solving skills are necessary.
- Physical ability to lift up to 25 kg.
- Flexibility to work various shifts as required.
Work Environment and Conditions
- Typical kitchen setting involving standing and walking for extended periods, exposure to heat, cold, steam, noise, odors, and occasional contact with fumes, smoke, chemicals.
- Physical demands include lifting, carrying, pushing, pulling, stretching, bending.
- Awareness of risks such as minor cuts and burns.
- Adherence to non-standard work hours.
