Role Overview
The Executive Pastry Chef holds a senior leadership position responsible for strategizing, directing, and coordinating all pastry operations across multiple outlets. Collaborating closely with Senior Chefs and company founders, they lead recipe design, ensure consistency in preparing premium quality pastry products, manage costs, and guide a sizable culinary team.
Key Responsibilities
- Collaborate with founders and executive chefs to develop menus and recipes aligned with brand storytelling.
- Supervise the consistent creation of high-standard pastry dishes and desserts.
- Conduct pastry and gastronomy training for kitchen staff to elevate team expertise.
- Lead recruitment, onboarding, training, and professional growth of a large pastry team.
- Oversee kitchen expenses, inventory, and waste to maintain budget adherence.
- Continuously expand personal skills by mastering new techniques and recipes.
- Maintain exemplary standards of food quality, safety, hygiene, and sanitation.
- Implement established policies for ordering, receiving, handling, and storing ingredients.
- Adopt and promote company core principles to foster a cohesive work environment.
Required Experience & Expertise
- Proven professional pastry kitchen experience with deep understanding of pastry chef demands.
- At least 3 years in a managerial role demonstrating clear career advancement.
- Experience working at Michelin-level establishments.
- Strong ability to mentor junior chefs in pastry and culinary arts.
- Familiarity with working in Western cities and managing multicultural teams and cuisines.
- Mastery in workforce management including interviewing, hiring, induction, and coaching.
- Active participation in recruitment decisions for quality team expansion.
- Formal education in Culinary Arts and Pastry with theoretical and practical expertise.
- Demonstrated prowess in menu curation and recipe development for new and existing outlets.
- Recognition via industry awards and accolades.
- Excellent business acumen to manage kitchen costs, inventory control, and waste reduction.
- Strong communication skills, both written and verbal.
- Creative mindset with experience in launching venues and updating menus frequently.
