Job description
Position Overview
We are looking for a seasoned and proficient Executive Chef to direct culinary operations across all Town Coffee locations in Jaipur, Rajasthan. This role demands leadership in ensuring food quality consistency, innovating menus, controlling food costs, adhering to safety and hygiene protocols, training kitchen personnel, and standardizing procedures across multiple outlets.
Primary Responsibilities
- Manage kitchen operations at all Town Coffee outlets ensuring efficiency, discipline, and smooth workflow.
- Develop and maintain standard operating procedures (SOPs) for every kitchen activity.
- Guarantee uniform taste, presentation, portioning, and quality standards at all locations.
- Oversee daily kitchen performances and handle operational challenges swiftly.
- Collaborate closely with outlet managers and F&B management for seamless operations.
- Create and refine menus aligned with brand identity and customer preferences, introducing seasonal and novel dishes.
- Conduct trials and tastings prior to launching new offerings, ensuring recipe standardization.
- Maintain detailed recipe documentation including ingredients, quantities, techniques, and serving sizes.
- Manage food cost benchmarks by controlling purchases, portioning, and production planning.
- Monitor consumption, waste, spoilage, and discrepancies to optimize inventory.
- Work with procurement and central stores to reconcile food requirements and stocks.
- Perform regular quality audits ensuring compliance with recipes, portion control, and presentation consistency.
- Ensure raw materials meet quality thresholds and reject subpar products.
- Implement and uphold strict FSSAI food safety standards alongside GMP, GHP, and HACCP protocols.
- Supervise personnel hygiene, uniform standards, equipment sanitation, and pest control measures.
- Lead recruitment, training, and evaluation of kitchen team members fostering high performance and leadership development.
- Plan production schedules based on sales forecasts and special event requirements, minimizing overproduction and waste.
- Identify cost-saving measures and process improvements enhancing kitchen productivity without compromising quality.
- Ensure timely maintenance and safe operation of kitchen equipment coordinating with maintenance teams.
- Generate and analyze kitchen performance reports, providing feedback and strategic recommendations to management.
- Regularly visit all outlets to monitor and improve culinary standards organization-wide.

Candidate Profile
- Educational background including Diploma or Degree in Hotel Management, Culinary Arts, or an equivalent field.
- A minimum of 8 to 12 years in culinary roles with senior-level experience such as Executive Chef, Corporate Chef, or Head Chef in multi-outlet environments.
- Comprehensive expertise in Indian and Continental cuisines.
- Proficiency in menu development, recipe standardization, and food cost management.
- Strong knowledge of inventory control, wastage reduction, and food safety regulations.
- Exceptional leadership, communication, problem-solving, and coordination skills.
- Commercial acumen pertaining to restaurant operations and multi-site management.
Additional Information
The Executive Chef holds full accountability for overarching culinary quality, cost-efficiency, hygiene, consistency, productivity, training initiatives, and food safety compliance across all Town Coffee outlets. This position necessitates frequent visits between sites, delivering hands-on guidance to uphold and elevate kitchen standards within the organization.
