Role Overview
Become an integral member of The Chedi Al Bait's culinary team in Sharjah as a Commis Sushi Chef. This role involves supporting daily sushi kitchen functions within a luxurious setting, ensuring every sushi dish exemplifies outstanding quality, freshness, and exquisite presentation.
Responsibilities
- Assist in the daily preparation, assembling, and plating of sushi under the supervision of the Sushi Chef or senior kitchen staff.
- Adhere strictly to established sushi recipes, portion controls, and presentation standards for consistency.
- Help prepare essential ingredients, including fish, seafood, rice, vegetables, and condiments.
- Ensure proper handling, storage, and rotation of raw materials according to hygiene protocols.
- Organize and prepare sushi workstations, including mise-en-place setup for service.
- Maintain cleanliness and sanitary conditions of sushi counters, tools, knives, and storage spaces.
- Comply with all hygiene, safety, and sanitation practices, following HACCP regulations.
- Support the kitchen by performing additional duties as assigned by supervisors.
Requirements
- Previous experience as a Commis Sushi or Commis within a hotel kitchen setting.
- Fundamental culinary skills and understanding of sushi making techniques and kitchen procedures.
- Knowledge of food hygiene, particularly related to handling raw fish and seafood.
- Ability to perform effectively in a demanding, fast-paced sushi kitchen.
- High attention to detail and commitment to maintaining culinary excellence.
- Professional appearance aligning with hotel standards.
- Willingness to work variable hours including weekends and public holidays.
- Positive team player with proactive attitude.
- Basic organization skills for mise-en-place, inventory, and ingredient storage.
- Desirable experience in luxury hotels or fine dining sushi establishments.
- Familiarity with international sushi preparation standards and Japanese culinary artistry.
- Competence with knife skills and preparation of sashimi, maki, and nigiri styles.
