Job Description
- Oversee all aspects of the food service operation, including hiring and management of both food servicer civilian and inmate workers, ensuring security within the cafeteria, and maintaining compliance with SCDC policies and regulations.
- Responsible for all paperwork required by SCDC and contracts for retention requirements.
- Responsible for maintaining equipment to ensure compliance and availability to prepare meals.
- Regular communication with food service branch management and institutional management is essential.
- Report any concerns. Enforces SCDC policy, rules, and regulations.
- Responsible for maintaining budget while ensuring operational compliance that includes managing scheduling, placing weekly food orders and overseeing purchasing and inventory.
- Conduct inspections of outside feeding areas to include RHU and other housing units.
- Any duties as requested that may fall within job purpose
Must successfully complete four (4) weeks SCDC Basic Training upon hire

Minimum And Additional Requirements
State of South Carolina Minimum Requirements:
Related supervisory experience in food service.
SCDC Minimum Requirements
(Or an acceptable equivalency as approved by the State Department of Human Resources).
- A High School diploma
- Five (5) years of experience in quantity and quality cooking.
- One (1) year of supervisory experience.
- Three (3) years experience in a correctional environment preferred.
Must be certified in hazard analysis & critical control point (HACCP) or Servsafe manager or attain within six (6) months of employment.
Must be certified by South Carolina Department of Corrections Training Academy or must successfully complete SCDC basic training upon hire.
Must successfully complete basic supervisory course within eighteen (18) months of employment.
Preferred Qualifications
Three (3) years’ experience in a correctional environment preferred.
